Testi aka Çömlek Kebabı is a dish of lamb, vegetables and herbs baked in a closed clay pot and then opened ceremoniously. We ate at an Ottoman-style restaurant in Istanbul, called Deraliye. I had the Sultan Suleiman sampler plate, which included Tuffahiye (fruıted lamb stew with stuffed apple), quail and eggplant, and roasted lamb server wıth meze (appetizers) and fresh pıde.
